1. Preheat broiler and arrange chilled seafood sausages on a broiler pan. Score each sausage diagonally at 1/2-inch intervals and brush generously with melted butter. Place sausages on upper rack and broil on one side only until browned, about 3 minutes. Move pan down to a lower rack and turn sausages over to cook until warmed through, another 2 minutes.
2. Serve sausages in hot dog rolls with sauerkraut butter on side and salt and vinegar chips. Yield 4 servings.
