 New Menu Idea – Open Faced SandwichesTracy Miller opened Duran European Sandwiches in Chicago, featuring a smorgasbord of open-faced creations on custom-baked white bread. For her, open- faced sandwiches are all about layering tastes and textures, be it a sandwich smeared with chèvre and striated with pickled carrot salad, arugula, baby beets and fresh herbed cream cheese, or one topped with sauerkraut, German potato salad, cheese-filled German sausage, onion and German mustard. “It’s all about getting that whole plate in one bite,” she says. “It’s about layering and not putting too much on one sandwich.”
